bio

Hello, I’m Chef Edouardo Jordan—James Beard Award winner and culinary storyteller. I’d love for you to join me on an unforgettable journey through Peru. I’m known for diving headfirst into flavor (sometimes literally—like the time I went deep-sea scallop diving in Sweden with no training). I bring my passion for foraging, cooking, biking, and cultural exploration to every adventure. This curated trip is your chance to experience Peru’s rich history, vibrant food scene, and artistic spirit through my lens as a chef who lives for discovery. Come hungry—for both food and connection—and let’s explore together.

Peru > Peru on a Plate: A Culinary Journey Through the Andes with Edouardo

Taste your way across Peru’s gastronomic hotspots, where indigenous ingredients meet contemporary flair in every dish. In Lima, wander through vibrant neighborhoods like Miraflores and Barranco, sampling classic dishes such as ceviche, anticuchos, and pisco sour. Then, venture into the Andes and land in Cusco. In the ancient Inca capital, we'll tour local landmarks and enjoy delicious delicacies at local restaurants. From there, we'll head into the Sacred Valley to tour Pisac, Ollantaytambo, and Machu Picchu. Our gastronomical and cultural adventures end in Cusco, where we'll join a hands-on cooking class and take a recipe or two home with us. A farewell feast then wraps up our amazing time in Peru. Got your stomach grumbling? It's a sign — sign up now!

-After a warm group welcome and a smooth transfer to our stylish home base in Miraflores, we’ll settle in and soak up the city’s coastal energy.

-Tonight, we kick off our adventure with a welcome dinner at Mangos, perched above the Pacific in the iconic Larcomar complex, an unbeatable spot to watch the sunset and toast to new friendships.

-Mangos is known for its panoramic ocean views and a menu highlighting classic Peruvian flavors and international favorites, making it the perfect introduction to Lima’s creative spirit and the delicious diversity that awaits us.

Day 2 · April 14, 2026
A culinary journey through Lima's flavors

-Today is all about diving fork-first into Lima’s legendary food scene. After a fresh local breakfast, we’ll set out on a gastronomic walking tour through the city’s most iconic neighborhoods: the historic heart of Lima, the trendy streets of Miraflores, and the bustling markets of Surquillo.

-Along the way, we’ll meet the vendors, taste the street snacks, and discover how Lima’s multicultural roots shape every bite — from zesty ceviche to sweet, crispy churros.

-Tonight, we gather for dinner at Al Fresco, a beloved local spot where the city’s love affair with seafood and seasonal produce truly shines. Get ready for a day that’s equal parts flavor, fun, and local color.

Day 3 · April 15, 2026
Cultural treasures of Cusco

-After breakfast, we leave the coast behind and fly high into the Andes, landing in Cusco, the former capital of the Inca Empire and a city where history is written in every stone.

-Once we’ve checked in and caught our breath, we’ll set out on a guided city tour that brings Cusco’s past to life.

-Marvel at the grandeur of the Cathedral, the Spanish artistry of Santo Domingo Convent (built atop the Inca temple of Qorikancha), and the monumental ruins of Saqsaywaman, Kenko, Puka Pukara, and Tambomachay.

-Each site tells a story of resilience, creativity, and cultural fusion.

-We’ll cap off the day with dinner at Roots, where Andean ingredients and modern techniques come together in every dish.

Day 4 · April 16, 2026
Sacred Valley discoveries

-Fuel up with breakfast before we set out to explore the Sacred Valley, a lush corridor once considered the breadbasket of the Incas.

-Our first stop is Pisac, famous for its vibrant market and hilltop ruins, where we’ll browse artisan crafts and soak in sweeping valley views.

-Next, we head to Ollantaytambo, a living Inca town with ancient terraces and a fortress that once resisted Spanish conquest.

-After lunch aboard the scenic PeruRail Expedition train, we wind our way along the Urubamba River to Aguas Calientes, the gateway to Machu Picchu.

-Tonight, we relax and recharge at our hotel, sharing stories over dinner as we anticipate tomorrow’s epic adventure.

Day 5 · April 17, 2026
Machu Picchu awaits: a journey through Incan history

-Today is the day! After breakfast, we ascend to Machu Picchu, the legendary “Lost City of the Incas.”

-With a local guide leading the way, we’ll wander through temples, terraces, and hidden nooks, learning how this marvel of engineering and spirituality remained hidden for centuries.

-After a leisurely lunch back at the hotel, we check out and board the train for our return to Cusco, where we’ll settle in for the night.

-Dinner awaits at Uchu Peruvian Steakhouse, where the flavors of the Andes-think sizzling meats and smoky spices-take center stage in a cozy, convivial setting.

Day 6 · April 18, 2026
Hands-on practice of Peruvian culinary arts

-Enjoy a relaxed morning to explore Cusco your way: wander artisan markets, visit a museum, or simply sip coffee and watch the world go by on a sunlit plaza.

-At lunch, we’ll gather at Kusykay, a spot renowned for its creative takes on classic Peruvian comfort food.

-In the evening, we come together for a hands-on cooking class at Nuna Raymi, where we’ll learn the secrets behind some of Peru’s most beloved dishes before sitting down to a festive farewell dinner.

-It’s a night to celebrate new skills, new friends, and the unforgettable flavors we’ve shared.

Farewell to the enchanting Andes

-Our final morning begins with breakfast and a last stroll through Cusco’s enchanting streets.

-After checking out, we transfer to the airport for our flight back to Lima, hearts and bellies full of memories.
